Don’t open your oven within the 30 first minutes of baking. Your cake risks collapsing and the temperature dropping.
All ovens are slightly different. Don’t rely on a clock only. Go check on your cake regularly to make sure it doesn’t burn.
We don’t recommend using margarine in your cakes. Butter will give a nicer texture and flavor.
You can get many brands around town (Isigny, Elle & Vire, Président, Anchor). They will make a big difference in the flavor of your cakes.
Which flour is best for cakes? Go for a classic T55, usually called all-purpose flour or cake flour.
